Fresh citrus fruits and herbs have been carefully chosen to give the best of their aromatic characteristics to these extra virgin oils following the ancestral process of enfleurage. Inspired by perfumery, this method consists in making olive oil absorb aromatic molecules from fruits or fresh plants, by decoction, in order to obtain a natural, powerful and authentic aromatization. The French origin of fresh plants is guaranteed and they are picked in season, at the time of day when they develop the most aromas.
Grown and produced at Chateau d'Estoublon it is harvested in November and December each year.
The history of the Domaine d'Estoublon is linked to the Vallée des Baux de Provence", in the heart of the Alpilles and the PACA region, in the South of France It is undoubtedly one of its most remarkable sites. Olives are cultivated and processed on the estate, in compliance with organic farming and following exclusively manual and mechanical manufacturing processes, without the use of chemistry.
