The andouillette de Troyes is a chitterling sausage made in the Champagne Ardennes region of France. It has a very particular sharp taste and a delicate texture and is served i most traditional French restaurants around the country. You will find the andouillette in Lyonnaise cuisine grilled and served with a grain mustard sauce. 

the AAAAA stands for Association Amicale des Amateurs d'Andouillette Authentique (Friendly Association of Authentic Andouillette Lovers) which gives this label to the most traditionnaly produced andouillettes.
